About Mary Brighton: Registered Dietitian and French Trained Culinary Nutritionist

Mary Brighton MS, RDN
I am a Registered Dietitian Nutritionist with extensive and diverse experience including 15 years in an international setting. Recently my passion in studying food culture has lead to a specialization gastronomy diploma in culinary education and taste from Institute of Higher Studies of Taste, Les Hautes Etudes Du Gout in France and I graduated with honors from the University of Reims Champagne-Ardennes in Gastronomy. This degree was supported by a competitive and generous scholarship I was awarded in 2014 by Le Cordon Bleu International.
My initial career background includes a Bachelor of Arts degree in Economics and Political Science from Rutgers University, with worked experience in advertising in New York City. I realized my passion was in wellness and nutrition and I changed direction and moved out west where I obtained my Master of Science in Nutrition with interdiscipline studies in Exercise Science from Colorado State University.
After successful completion as a Registered Dietitian Nutritionist, I worked as a Public Health Nutritionist and Co-Coordinator for the USDA Woman, Infant, Children Public Health Program in New Jersey. A geographical move brought me to Europe in 2000, where I lived in Nuneaton, England and then Pau, France. I am a registered dietitian in the United States, United Kingdom and France, and I have extensive volunteer and paid nutritional experience supporting clients, including a population close to my heart: children and their families. My years of living in France have shown me that the cultural French way of eating and drinking based on taste, food quality and freshness, slow dining and La Joie de Vivre can be positively correlated with a nutritionally-rich diet leading to good health and wellness.
Sadly, in our global fast-paced world, even in France, these basic gastronomic habits are disappearing and there is a movement towards convenient ready-made foods and faster meal times. I believe that gastronomic eating can and should be brought back on the fore-front and open to everyone: by adding taste to simple and fresh foods we can promote healthy and pleasure eating and slow down the progression of life-style related diseases and obesity rates.

I use my free time as an active blogger at brightonyourhealth.com, writing articles on the French way of eating for good health, promoting French and Italian gastronomy and publishing recipes that are both healthy and rich in taste. I am writing a parent’s guide book on how to feed teenagers healthy balanced meals they like to eat.
